My boys and I had a great time touring the farm and learning the history of Shipley Farms. Farmer Bob did such a great job explaining the history of the farm and showing us around. Farmer Bob is one of those people that you can talk to for hours and soak up everything he has to share. My 17 year old son talked about our tour for hours and kept saying repeatedly how great of a time he had. We also purchased several ribeyes and filets, and they were phenomenal. We will definitely stop by again the next time we are in the area.

So thankful Shipley Farms in in Watauga County. We are very lucky to have them in our county. After more and more supermarket disappointments with our steaks- not being sure what country it's coming from, or what's been done to preserve them in transit; I decided that Shipley Farms will be my go to for our meats. For Thanksgiving I got some aged Ribeyes and Filet Mignons and my fussy husband raved at the freshness and quality, he tasted and commented immediately these are aged. As long as his tastebuds are happy I'm willing to drive the few extra miles and pay the premium to support local small business and US farms . Thank you Shipley Farms.

we ordered 7 filets and picked them up on the farm. we were fortunate enough to meet gray shipley and get a brief lesson about his farm and how their cows are raised. extremely informative and interesting story behind their farm and family. i have to say those were the best filets we have ever had and highly recommend them to everyone. we are looking forward to picking some up next trip down to boone and will also be ordering some through the mail. we already have some ideas for the holidays as well. they also have really good merchandise which is going to help me spread the word about this wonderful farm. it is truly worth the drive to check them out in person.

While visiting the Boone, NC area we found this wonderful resource and purchased several items from the farm store to take home to Charlotte, NC. EVERYTHING was simply outstanding and we couldn't be more pleased; it is nearly impossible to find food of this quality in this "heavily processed to feed millions" world of food Inc. We have made Shipley Farms our exclusive supplier of beef and pork (and some goodies for our Alaskan Malamute Ranger) via a subscription service with them that delivers to our home. Very surprised at how tough the steaks were, perhaps that is result of grass fed. But disappointed on a taste basis. I’ll buy non grass fed meat in the grocery store that tastes better and is a lot less expensive.

The Signature Filet Mignon is the tenderloin, the leanest, most tender muscle on the animal, and the one that rewards a hot pan and a short cook. Ours is dry-aged before it is cut, which is unusual for a filet: most of the dry-aged beef you will find is sold as ribeye or strip, because those cuts carry the fat that makes aging forgiving. Aging a tenderloin takes more care and costs more yield.

Why dry-aged costs more. Dry-aging is slower and more expensive than the usual process, which is why you almost never find it in a grocery store. The beef rests in a temperature and humidity controlled cooler, where moisture evaporates and the flavour concentrates, while enzymes naturally present in the meat break down muscle tissue and improve the texture. We lose weight and cooler weeks doing it. Our Signature line is dry-aged all the way through, not just the show cuts.

Our cattle are Hereford, Red and Black Angus and South Devon. English breeds the Shipley family has raised for 150 years, since W.E. Shipley brought the first registered Hereford stock into North Carolina. They live on open mountain pasture, never confined and never in a feedlot. They are never given growth hormones or steroids, and never fed antibiotics to promote growth. Their diet is grass and forage from our own pastures, supplemented with a custom blend developed with experts from the NC State College of Agriculture.

Best seared hard in a heavy pan or over direct heat and pulled at medium-rare. It needs no help, though it does not object to bacon.
