Oxtail Stew
Oxtail takes longer than almost anything else and gives back more. Four hours, mostly unattended, and the sauce makes itself.
Oxtail is almost all bone, collagen and connective tissue with a little meat wrapped around it. On the cut map logic that makes it the slowest thing on the animal, and the best possible stew.
| 3 lb Beef Oxtail | 1 salt, rest 1 hr | 2 brown hard, every side | 3 cover, braise low, ~4 hours | |
| 2 tsp coarse salt | ||||
| 2 Tbsp beef tallow | ||||
| 2 onions, chopped | 4 soften, then add the paste | |||
| 3 carrots, in chunks | ||||
| 4 cloves garlic | ||||
| 2 Tbsp tomato paste | ||||
| 2 cups red wine | 5 reduce by half | |||
| 3 cups beef stock | ||||
| 2 bay leaves | ||||
| 6It is done when the meat leaves the bone with no effort at all. Four hours is a guide. | ||||
| 7Chill it overnight if you can. The fat sets on top and lifts off, and the sauce is better the next day. | ||||

Why it makes such good sauce
All that connective tissue turns to gelatin over four hours, and gelatin is what gives a sauce body and gloss without any flour in it. A properly finished oxtail stew sets to a jelly when cold. That is the sign it worked.
βAnd, so, yeah, I think we're seeing people paying attention to all of the different cuts and using all animal cooking with tallow is kind of a hot trend right now. So 10 years ago, I was trying to talk to anybody who would listen and, oh everybody wants to do it now.β

Brown it harder than feels sensible
Oxtail has a lot of surface area for its weight, which means a lot of opportunity to build browned flavor. Take the time. Pale oxtail makes pale stew.
βBut, well, they don't cooperate. It's not in your control the weather and the animals staying in their fencing where they're supposed to be. And predators and all kinds of hiccups that make it more challenging than you think.β

βOh essence of farming is finding the balance between hoping it's going to rain and hoping it's not going to rain.β

The same approach on a meatier cut is in braised short ribs.
How do I cook oxtail?
Brown it hard, then braise it for four hours until the meat slides off the bone.
