What to Do With Beef Kidney

Kidney is the one people try last, usually once. Done properly it is the backbone of a steak and kidney pie. Done carelessly it is unforgettable for the wrong reason.

Kidney is where most people's offal experiment ends, and almost always because of preparation rather than cooking. Where it sits in the list is in our guide to beef offal.

Soak it first

Halve it and soak it in cold water, or in milk, for a couple of hours. Change the water once. This draws out a good deal of what makes the flavor aggressive and it is not an optional refinement.

Trim the core out completely

There is a white, fatty, tubular core running through the middle. All of it comes out. Any that stays behind turns rubbery and carries most of the flavor people object to. Cut generously; what you are discarding is cheap.

β€œSo yeah, hard is good. And hard work on the farm is something that you don't really need to get separated from. There's some real benefit from it in a lot of ways.”

Then go fast or go long

  • Fast. Sliced thin, hot pan, a minute or two a side, served pink. Past that it goes firm and strong.
  • Long. Cubed into a braise with beef and stock for a couple of hours, which is steak and kidney. The long cook mellows it in a way the quick one does not.
  • Never in between. Twenty minutes of medium heat gives you the worst of both.

β€œAnd, so, yeah, I think we're seeing people paying attention to all of the different cuts and using all animal cooking with tallow is kind of a hot trend right now. So 10 years ago, I was trying to talk to anybody who would listen and, oh everybody wants to do it now.”

β€œYeah, when it's just, when it's made of food, I say food made of food. What I mean is food that actually comes from real. Food products, real things that are grown or raised things that are natural. And when you prepare something out of real food ingredients, it can just taste the difference.”

About this guide

Written at Shipley Farms in Vilas, North Carolina: a family cattle farm raising and dry-aging beef in the Appalachian Mountains, now in its fifth generation. No shortcuts since 1872.

Every quote on this page is Gray Shipley talking, the man who runs this farm. We sat down with him, turned on a recorder, and kept his own words. Hesitations are trimmed so they read on the page. Nothing else is added or reworded, except where Gray revised his own words in review.

Nobody knows this beef better than we do. On food safety we leave it to USDA FSIS and FoodSafety.gov, and we have linked their pages above. Reviewed 3 October 2026.
