How to Cook Skirt Steak

Skirt is the cut that fajitas are made of. It takes about four minutes to cook and about four seconds to ruin at the cutting board.

Skirt comes off the plate, low on the animal, which on the cut map is the bottom row. It is thin, it is coarse, and it carries a lot of flavor for the money.

The method, which is short

  1. Get the pan or grill as hot as it goes. Hotter than you would for a thick steak.
  2. Dry the surface and salt it. Skirt is thin enough that salting long in advance is not necessary.
  3. Two minutes a side, at most. It is thin, so there is no slow middle to worry about.
  4. Rest five minutes.
  5. Slice across the grain, and slice it thin.

Why the heat has to be that high

A thin steak cooks through before it browns unless the surface heat is extreme. On a thicker cut you have time to build a crust while the middle catches up. On skirt you have no time at all, so the pan has to do the work instantly.

The grain is not optional here

Skirt has the most obvious grain of any cut we sell. The fibers run in visible parallel lines and they are long. Slice with them and the result is genuinely inedible. Slice across them and it is tender.

On a long skirt the grain can change direction. Look along the whole piece before you cut, and turn it as needed. More on this in why is my steak tough.

β€œThis is one thing that I've never figured out how to crack it to do it really well is meatloaf. If I've got my grandmother or my mom doing a meatloaf, that's fantastic.”

β€œYeah, no shortcuts just means, it's a mindset, the mindset of looking for a shortcut. It doesn't mean that we don't look for improvement. It doesn't mean we don't look for ways to do things better.”

About this guide

Written at Shipley Farms in Vilas, North Carolina: a family cattle farm raising and dry-aging beef in the Appalachian Mountains, now in its fifth generation. No shortcuts since 1872.

Every quote on this page is Gray Shipley talking, the man who runs this farm. We sat down with him, turned on a recorder, and kept his own words. Hesitations are trimmed so they read on the page. Nothing else is added or reworded, except where Gray revised his own words in review.

Nobody knows this beef better than we do. On food safety we leave it to USDA FSIS and FoodSafety.gov, and we have linked their pages above. Reviewed 3 October 2026.
