North Carolina Food Gifts

A food gift from North Carolina should taste of a place and be traceable to one. That rules out most of what gets sold as regional, and it leaves the things that come from a farm somebody can name.

Regional food gifts are an easy thing to fake. Put a state outline on a tin and it becomes a souvenir. The ones worth sending have a farm behind them and somebody whose name is on it.

What makes it actually from somewhere

That is the mechanism. What the animals eat and where they graze ends up in the fat, and the fat is where flavor lives. A place is not a label on a box, it is the pasture the beef came off.

The High Country specifically

We farm in Vilas, in Watauga County, in the Appalachian Mountains. The family has been at it since 1872 and we are the fifth generation doing it. That is the part a gift from here carries that a tin cannot.

North Carolina has opinions about food, and they are worth knowing
