What a Whole Beef Costs, and How Hanging Weight Works

A whole beef takes a $750 deposit with the balance at $8.75 per hanging pound. The part worth understanding is what hanging weight is.

Two ways to buy at this scale, and they are priced on completely different principles. Here is both, as they stood on 21 October 2026.

The numbers

  • Whole beef. $750 reservation deposit. Balance billed at $8.75 per hanging pound.
  • Side of beef. $500 reservation deposit. Balance billed at $8.85 per hanging pound.
  • Half beef share. $3,000 flat, about 175 lbs across 26 cuts. No weight arithmetic at all.

The side costs slightly more per pound than the whole animal. That is not a markup for the sake of it: half an animal takes almost the same handling as a whole one.

What hanging weight actually is

Hanging weight is the carcass after harvest and before cutting and trimming. It is the standard unit for custom beef, and it is the honest one to bill on, because it is measured before anyone makes decisions about your cut sheet.

It is also not what you carry home. Bones, trim and moisture loss all come off between the hanging scale and your freezer. How much comes off depends on the animal and on how you have it cut, which is why we do not publish a yield percentage: any single number would be wrong for most customers.

“Yeah, sometimes you see that people think it's going to be cheaper. And the logic is, well, hey, we've cut out the middleman, right? If we don't have the distributor, we don't have the transportation, it's not going to Nebraska and back. We should have saved a whole lot of costs.”

Gray Shipley

“Yeah, the reality is it costs more because it costs more. It costs more to do things responsibly.”

The question to ask anyone selling beef this way

Which weight is that price per pound? If the answer is not immediate and specific, be careful. The gap between hanging and take-home is wide enough to change the real cost substantially, and a per-pound figure quoted against the wrong one is the oldest trick in this business.

The full vocabulary is in beef buying terms, explained.

“You know, a certification, really what a certification is you're paying someone else to go tell you what is true. Tell you what is happening somewhere.”

If the arithmetic is the part you do not want, the fixed-price shares are in what a beef share costs.

About this guide

Written at Shipley Farms in Vilas, North Carolina: a family cattle farm raising and dry-aging beef in the Appalachian Mountains, now in its fifth generation. No shortcuts since 1872.

Every quote on this page is Gray Shipley talking, the man who runs this farm. We sat down with him, turned on a recorder, and kept his own words. Hesitations are trimmed so they read on the page. Nothing else is added or reworded, except where Gray revised his own words in review.

Nobody knows this beef better than we do. On food safety we leave it to USDA FSIS, and we have linked their page above. Reviewed 3 October 2026.
