How Long Does Beef Last in the Freezer?

At zero degrees Fahrenheit, frozen beef stays safe indefinitely. What changes is quality. Steaks are best inside six to twelve months, ground beef inside three to four. Here is the full picture, and w

If you have just taken delivery of a freezer order, this is the practical question. The answer splits into two, and the split is the useful part.

  • Safety. At zero degrees Fahrenheit, beef stays safe indefinitely, according to USDA FSIS. Freezing halts the microbial activity that spoils food.
  • Quality. This is what actually degrades. Fat oxidizes, ice crystals damage cell walls, and moisture migrates out of the meat.

Quality windows by cut

  • Steaks. Four to twelve months.
  • Roasts. Four to twelve months.
  • Ground beef. Three to four months.
  • Sausages. One to two months.
  • Cooked beef. Two to three months.
  • Bones and broth bones. Up to a year, since there is little exposed muscle.

Those windows are the FoodSafety.gov cold storage figures, not ours. The pattern is surface area. A whole-muscle steak in a vacuum bag has very little of itself exposed. Ground beef is almost entirely surface.

Why we send beef frozen

This is not a compromise on our end, and it is worth saying plainly.

Fresh beef has a short window, and a parcel in transit spends part of it in a truck. Frozen beef arrives with its clock still stopped. There is more on that reasoning in fresh versus frozen.

How to get the longest life out of it

  1. Keep the freezer at zero degrees Fahrenheit or below. Check it with a thermometer rather than trusting the dial.
  2. Leave the vacuum seal intact until you are ready to thaw.
  3. Label with the date when it arrives, not when you remember.
  4. Use the oldest first. Put new deliveries at the back.
  5. Avoid the door. It is the warmest part and it cycles every time you open it.
  6. Do not refreeze thawed beef unless it was thawed in the refrigerator and is still cold.
